Winemaking: His first Cinsault, with a cyanotype label created by his wife Vicky, was made with grapes exchanged for work in the vineyard. From a 40-year-old vine managed organically in the area known as "Gres de Montpellier", the grapes are hand-picked, fermented in whole bunches. Indigenous yeasts.
