Winemaking:
70% of the blend is the last of the 2018 Pinot Meunier, pressed whole-bunch to tank for 18 months, later racked to an old barrel for another 18 months. The other 30% comprises an even mix of 2021 Solaris & Siegerrebe, both macerated on the skins for 21 days before pressing to tank. Combined with the 2018 in a stainless steel tank at the end of vintage, bottled with Pinot Meunier juice in late October 2021. No disgorgement.

Black Mountain Vineyard is a three hectare labour of love planted by Mark & Laura Smith in 2009. In the shadow of the Brecon Beacons, their South-Facing slope in Herefordshire is planted with hybrids well suited to the area. Organic certified since 2018, and with no additions in the cellar, Mark & Laura are producing excellent sparkling wines with ripeness & balance.
